Okara is a byproduct created during the tofu-making process, and is low in calories, high in protein, and rich in dietary fiber and calcium.
The company buys okara from local tofu stores, combines it with rice flour and wheat flour from Okayama, raw sugar from Kagoshima, coconut oil, and margarine low in trans fatty acids, and bakes it. The crunchy, melt-in-your-mouth texture is achieved by mixing raw okara in the dough and baking it for over an hour.
